A delightful breakfast recipe, Sausage Scramble is made with chopped chicken sausage, eggs, boiled potatoes and capsicum. Extremely delicious, this healthy recipe is a must try.
How to make Sausage Scramble
In a pan, heat oil on a medium flame and add the sausages. Saute for a couple of minutes, then remove from heat and drain excess oil on a kitchen pepper.
In the same oil, saute bell pepper and onion with salt and pepper for a couple of minutes. Then cover and cook for 5 minutes or until tender.
Add the potatoes and cook for 5 minutes or until potatoes are heated through, stirring often. Mash the potatoes if you like.
Stir in the sausage and mix well. Remove from heat and arrange on a plate.
Poach the egg and add it to the sausage plate or on top of the sausage plate or on top of the sausage mix.
Sprinkle parsley and serve immediately with breads of choice.
